Grown on the slopes of Huila

These beans come from a handful of smallholder farms high in the Colombian Andes, where cool nights and volcanic soil slow the cherries down and pack them with sweetness. We buy the whole lot at harvest, then roast it here in small batches so it reaches you tasting the way it did on the patio.

How to brew this roast

Three recipes we keep coming back to. Weigh your coffee, mind the time, and adjust the grind to taste.

1:16 · 22g : 350g2:45 total
  1. Rinse the filter and warm the dripper, then add 22g of medium-fine grounds.
  2. Bloom with 50g of 94°C water and wait 40 seconds.
  3. Pour in slow spirals to 200g, then to 350g by 1:30.
  4. Aim for the bed to drain by 2:45. Swirl, then serve.

We started Ember & Oak in a one-room workshop with a single drum roaster and a stubborn idea: that great coffee should taste like where it came from.

Every week we roast small batches to order, print the roast date on the bag, and ship within a day — no warehouse middlemen, no mystery blends sitting on a shelf for months.

We pay above the going rate for the lots we love, build long relationships with the farms that grow them, and pass the freshness — not the markup — on to you.
